KR55 is the Koda Farms proprietary medium-grain variety produced under the brand Kokuho Rose®. Developed in the 1950’s, this heirloom variety has garnered a long history for its cooking qualities and flavor – slightly floral with a sweet afternote. It is available in white or brown types in conventional or organic versions.
Sweet Rice, also known as mochigome, is a short-grain variety consumed as table rice, prepared in a variety of Asian dishes, and further processed into mochi. Koda Farms has carried the brand Sho-Chiku-Bai Sweet Rice® since the 1950’s. It is available in white or brown types in conventional or organic versions.
Yamadanishiki is the widely acclaimed rice variety used for making premium sake. Its starchy center with little protein is highly desired by sake brewers. It will be available organically from Koda Farms in October 2021.
